Culinary Students Top Beef Council Competition

SUNY Cobleskill culinary students took first place at the New York Beef Council Tour and Competition on Friday, cooking up a winning rib-eye steak to beat out five other teams.

The two-day event included a rally of touring beef producers and processors, lectures about beef retail and food service marketing trends, beef nutrition, GMO information, and a grass-fed versus grain-fed blind taste test. The cooking competition came at the end of day two, with six teams competing.

The SUNY Cobleskill team— consisting of juniors Anne Saint-Juste and Cristian Sanchez and sophomores Jarrod Wall and Aileen Henderson— won with a contemporary take on beef tartare and a roasted rib-eye steak with Parisian gnocchi, seasonal Schoharie County vegetables and chimi churri sauce. The team received a $2,000 scholarship and a plaque for the win.
